Change is a-Comin’
First James Henry breaks the news that Bones will be closing permanently August 7th. Shock, dismay. How can such a successful restaurant, always busy, always on the must-eat list for any visiting chef or food lover, be closing after two and a half years? Apparently those involved were ready for something new. Go while you can. It’s the end of a short and lovely era.
Now Roseval announces that it will be closing its doors on July 31st.
What’s next?
Before we all fly into a panic over the loss of such beloved restaurants (Who’s panicking? –Grabs inhaler-), there are some fortunate rumors on the rumor mill:
#1 Simone Tondo from Roseval is starting something new. And he’s taking the whole team with him. He was apparently looking at the Bones space for a while, but that now seems to be off the table. Wherever you go, I shall follow, my friends.
#2 James Henry, Shaun Kelly (ex-YARD), and Svante Forstop (ex-Aux Deux Amis, Vivant Cave) are talking about starting something together. You won’t have to twist my arm; I’ll be waiting on the doorstep. Sleeping on the stoop.
All mysterious teasers to be revealed in due time. At least the surprising and disappointing closure notices from these beloved favorite restaurants lead to promising signs of new life.
But get in your visits to Roseval and Bones while you can.
Speaking of new life, here’s a new spot to add to the list:
Oliver Lomeli, one of the Café Chilango owners, has opened a new natural wine bar just next door called La Chambre Noir, and Valentin (pictured), ex-Bones and Chapeau Melon employee, is now behind the bar serving up those au naturel wines with small plates to boot. Who needs normal sized plates anymore when small plates are reigning supreme? If it means I get to taste more things, I’m all for it. The space is oozing with charm; just needs a few more seats.
Congratulations to the respective teams at Bones and Roseval on whatever new ventures lie ahead. We will miss what we’ve come to know and love at both locations, and I’ll hate to see them go – They’ve both made their mark on Paris’ culinary map and provided us with fantastic dining experiences to remember.
I’m certainly intrigued by whatever is next and am looking forward to new developments as they come.

Me too!! I’ve come to love Bones so much, it feels like an institution already! And I just started going to Roseval again recently. We’ll have to get our fix while we can!
